Most travellers realistically visit 2-4 countries in a 10-16 day trip, but there is no legal limit on how many countries you enter, only on total days (90 within any 180-day period).

No, if you stay within the Eurozone — 20 of the 26 Schengen countries use the Euro. Switzerland (Swiss Franc), and a few others use their own currency, so check ahead if your itinerary includes non-Euro Schengen countries.
